Freeze-dried garlic is produced by converting fresh garlic into a durable, easy-to-use and versatile product through a process called freeze-drying or lyophilization. Freeze drying involves freezing the garlic and then drying it under vacuum. During the process, the frozen water in the garlic sublimates directly from solid to gas and the garlic becomes durable.

Freeze drying helps to preserve the flavor, aroma and nutritional properties of fresh garlic while extending its shelf life. The resulting freeze-dried garlic has a light and crisp texture and can be easily rehydrated by adding water or used directly in a variety of culinary applications. It is widely used as a convenient alternative to fresh garlic in cooking, seasoning and food preparation because it offers a long shelf life and retains much of the flavor and nutritional value of the original garlic.

Freeze Drying vs Different Drying Techniques for Garlic

Garlic can be made durable by different methods such as freeze drying, dehydration and microwave drying. However, the drying method used has a significant effect on the colour, taste, odour and biological properties of the final product. In general, freeze drying method provides better colour, aroma and flavour compared to alternatives.

In a previous study, the volatile compound profile of freeze-dried and dehydrated garlic and antibacterial activity against different bacteria were compared. The results showed that the amount of allicin, the main volatile compound of garlic, was higher in the freeze-dried sample. Furthermore, dehydration caused significant color change and the final product was more brown. Finally, the antibacterial activity of freeze-dried garlic powder was much better than the dehydrated product. Therefore, the authors claimed that freeze-dried garlic can be used as a natural preservative in foods.

A study compared flavor differences between dehydrated and freeze-dried garlic powder based on volatile compounds. The study revealed that diallyl disulfide, an important compound of garlic, was most abundant in freeze-dried garlic powder. However, all dried garlic powder samples in the study had lower diallyl disulfide content compared to raw garlic.

Acrylamide is a compound formed during the heating of food. It is neurotoxic and potentially carcinogenic to humans. In one study, freeze-dried garlic was found to have a higher ability to inhibit acrylamide formation than oven-dried garlic. The authors explained this finding by the higher allicin content in freeze-dried garlic.

In a paper published in 2023, the total phenolic content, total flavonoid content and antioxidant activity of freeze-dried garlic were found to be higher than dried ones. Furthermore, fresh, freeze-dried and dehydrated garlic were added to extra virgin olive oil to obtain aromatic oil. The aromatic oil obtained with freeze-dried garlic had better chemical properties and antibacterial activity compared to fresh and dried samples.

Researchers from China compared 5 different drying techniques to produce dried garlic slices. Results showed that freeze dried garlic slices had the highest whiteness, the least shrinkage, the least hardness, and the lowest rehydration capacity. Also, showed much different volatile flavour than heat-involved drying techniques.

Although there have been a few studies on the health benefits of freeze-dried garlic, fresh garlic and garlic extracts are one of the most studied foods. Since freeze-drying causes little change in the chemical properties of garlic, it can be argued that freeze-dried garlic may have similar health benefits to fresh garlic to a certain extent. How To Make Freeze Dried Garlic: Step-by-step guide

For production of a freeze dried potatoes you will need a bunch of supplies are needed.

  • Mylar bags or mason jars
  • Oxygen absorbers
  • Cutting board (for slicing)
  • Blender (for pureeing)

Step 1: Raw Material Selection

To make freeze-dried garlic of good quality and high flavour, the best option is to use fresh garlic. But fresh garlic is not your only option. You can also use processed products such as garlic puree, canned garlic and minced garlic. However, since these products are heat processed, their aromatic properties will be weaker than those produced from fresh produce.

Step 2: Peeling and Pre-treatments

Start by peeling the outer skins off the garlic cloves. Although garlic cloves can be freeze-dried directly, slice, chop or crush them for best quality and more health benefits.

While mincing or mashing the garlic will impart the strongest flavor, slicing or roughly chopping will be moderate. On the other hand whole or lightly crushed garlic cloves will result with a subtle, sweet flavor.

In terms of health benefits, crushing garlic allow an enzyme called alliinase to work. A scientific study showed allowing crushed garlic to stand for 10 minutes enhance formation of healthful organosulfur compounds which have different biological activities. Therefore, my advise to use chopping, slicing or mincing the garlic before freezing.

For different aromatic profiles, you can pre-treat garlic before freeze-drying, such as sautéing or roasting.

Freeze-drying garlic directly without any pre-treatment provides a strong garlic flavor similar to fresh garlic, while roasting garlic provides a milder flavor. On the other hand, sautéing provides a pungent and nutty flavor.

Step 3: Freezing

Put garlics on trays lined with parchment paper (do not use silicone sheets as they absorb the aroma and will not release it easily). Spread the garlic as much as possible on the tray will enhance drying performance. Pay attention to your freeze dryer's capacity.

The freezing step can be executed in a freeze dryer or using an external freezer. When utilizing an external freezer, put the trays inside of the freezer and wait between 2-8 hours until the products are thoroughly frozen.

Step 4: Freeze Drying

For pre-frozen garlics, initiate your freeze dryer 30 minutes before commencing the process. First, close the drain valve! Select the properties of your raw material (pre-frozen or unfrozen) in the dryer software you are employing. The software will provide guidance, and the dryer will initiate.

When the temperature descends to 32ºF (0ºC), the software will prompt you to place the trays. Insert the trays and select to proceed with the process. Generally, drying will conclude within 16-24 hours.

Inspect the products upon completion of drying. To do so, take the thickest items, cut them in half, and check for coldness or moisture in the center. If present, extend the drying process by a few hours; if not, stop.

Step 5: Packaging and Storage

Package the freeze-dried garlic in airtight bags, vacuum-sealed containers, or other suitable packaging materials to maintain their freshness and prevent moisture reabsorption. Since it is used in small amount, make sure to use small packaging to prevent spoilage of remaining materials.

Label the packages with the date of freeze-drying and any other relevant information.

Store the freeze-dried garlic in a cool and dry place away from direct sunlight. They can remain edible for an extended period, from several years to 3 decades, if stored properly.

How Long Do Freeze Dried Garlic Last

Freeze-dried garlic has an extended shelf life compared to fresh or preserved garlic. When stored properly in airtight containers in a cool, dry place away from moisture and sunlight, freeze-dried garlic can last for a very long time—often up to 30 years.

The longevity of freeze-dried garlic is due to the removal of moisture during the freeze-drying process, which inhibits the growth of bacteria, molds, and other microorganisms that typically cause food spoilage and limits the chemical reactions. However, this requires that there is no change in the moisture and oxygen-proof properties of the packaging.

After opening of the packaging, freeze dried garlic are susceptible to environmental conditions. Particularly in humid environments, they rapidly absorb moisture, leading to a soft and sticky texture. This process also accelerates chemical and microbiological reactions.

How To Rehydrate Freeze Dried Garlic

Rehydrating freeze-dried garlic is a simple process that restores its original texture and flavor, making it similar to fresh garlic. Here's how to rehydrate freeze-dried garlic:

  • Determine the amount of freeze-dried garlic you need for your recipe.
  • Place the desired amount of freeze-dried garlic in a bowl or container. Add enough (1.25 fold of garlic weight) warm water to completely submerge the garlic. The water should be at a temperature that is comfortable to touch but not boiling.
  • Allow the garlic to soak in the warm water for about 5 to 10 minutes. The warm water will gradually rehydrate the garlic and restore its original texture.
  • Occasionally stir the garlic to ensure even rehydration. Check the garlic's texture and add more water if needed. It should become plump and soft.
  • Once the garlic is fully rehydrated and has a texture similar to fresh garlic, drain any excess water. You can use a strainer or gently press the garlic to remove excess moisture.
  • If necessary, pat the rehydrated garlic with a paper towel to remove any remaining moisture.
  • Rehydrated garlic is now ready to be used in your recipe just like fresh garlic. Incorporate it into soups, stews, sauces, stir-fries, or any other dish as needed.
